Oh happy day! I have the day off and the hubby is going on a guy’s weekend. Starting today. I have the whole weekend to myself. I love ‘me’ time and I just don’t get enough of it. I will be soaking up every minute. First things first….shopping! Some essentials are in order!

1. Frills Hair Bands. Practical and sassy.

2. PEI-Design Notepad. Gotta have a plan! But, mostly I just love notepads.

3. Yellow Pen. Safe to say I am obsessed with these pens! So many great colors!

4. Go Be Lovely Lavish Hand Cream. Have you all checked out Illume’s new packaging? It is to die for!

5. Market Tote.

6. Cleo Blue Suede Loafers.

It’s chilly and rainy here in Kansas City and I can’t think of a more perfect way to spend the weekend than to cozy up with a soft blanket and book. Doesn’t that sound just fabulous? After a long week of work, relaxation sounds just fine to me!

Pumpkin French Toast {Gluten-Free!}

french toast 1Saturday morning, Tad and I got to enjoy an amazing homemade brunch together. It had been so long since we got to do that! Recently, the weekends have been scattered with working or being out of town, both of which are definitely not as fun as french toast.

I made the french toast while Tad made the bacon and eggs. With a large cup of coffee, cozy JCrew camp socks, and a Hallmark Christmas movie on TV, it was a perfect Saturday morning. However, those minutes spent watching the Hallmark channel were probably minutes Tad wishes he could have back ha!

This recipe was so easy to make… I whipped it together in about three minutes and cooked it in five. It was so perfect! I might just have to make this again one night this week!

Pumpkin French Toast (recipe slightly adapted from here)

Ingredients

3 large eggs
1/4 cup pumpkin puree
3 Tbsp almond milk (or any milk)
1 tsp. ground cinnamon
1 tsp. vanilla extract
Pinch of ground nutmeg
4 slices gluten-free bread (can use any bread)

Directions

In a large bowl, mix together the eggs, pumpkin, milk, cinnamon, vanilla, and nutmeg with a whisk.

Place the 4 slices of bread in the bowl to let soak in the egg mixture. While the bread is soaking, heat a large non-stick skillet on medium-high heat.

Once the skillet is heated, place all four slices of bread in it.  Cook the bread until golden brown, approximately 2-3 minutes. Flip bread over and cook the other sides until golden brown.

Remove the bread from skillet and top with whatever you please! We topped ours with butter, maple syrup, powdered sugar, and toasted sliced almonds. It was divine! A large dollop of whipped cream could also do the trick!

Yes, it’s official… ERIN AND NATALIE ARE TOGETHER THIS WEEKEND!!

This makes us oh-so-happy. OH-SO-HAPPY. Bloggie sisters and best friends reunited. The best.

We hope you all had a fabulous Halloween! It was pretty uneventful around here as storms in Ohio and Indiana kept the trick o’ treaters away (the nerve!). Oh well… more candy for us!! (Reese’s cups make us weak in the knees).

Be sure to follow us on Instagram for all of our weekend festivities! Tonight will consist of birthday celebrations for our mom (Happy 29th, mom!). We’re headed to a chic diner in Columbus so it’s destined to be a good time.

Happy Friday, everyone!! Hope you all have some fabulous plans up your sleeve for the weekend. Tad and I are headed to Arkansas for a much needed mini- vacation with his family! And of course, to cheer on the Razorbacks 🙂
