Happy Tuesday!!! I don’t know about where you are, but it is freaking freezing here in Columbus. I have the day off school today because you cannot be outside for more than a minute because your nose will fall off. I’m more than a little over it. The day off is nice though!

Here is this week’s roundup that consists mostly of things that are saving me from seasonal affective disorder, which I assure you is a very real thing.

1. Y’all it is so cold. My skin is literally cracking off. Kiehl’s has been my only saving grace.

2. In this weather….these boots are a must.

3. Ok, I seriously need 100 of these adorable Polka Dot Bins and for 10 bucks apiece???

4. This lip balm is amazing. I’ve gone through a whole ball of bliss already this week.

5. I love this throw of mine.

6. I’ve said it once, and I’ll say it again. These matches are amazing.

Sister time is happening this weekend! Nat is passing through on the way to a residency interview! Here are some of the things we will be up to for two whole glorious days! Be sure to follow us on Instagram for all of the weekend shenanigans!

I’ve mentioned this cookbook before here, but letmetellyou this is THE book to have if you’re starting out gluten-free. Or if you’re a year into it and still looking for information.

I made this breakfast casserole for Tad’s family over Christmas and it was so tasty. SO tasty. You couldn’t even tell it was gluten- free… win!

This cookbook provides tons of super easy recipes for the gluten haters and this recipe is no exception. Will I be making this again? Oh yeah. It’s perfect if you’re having guests over… prepare it the night before and just pop it in the oven in the morning! Voila!

Breakfast Casserole {Gluten- Free} (Serves 10)

Ingredients

1 pound sausage, gluten-free
6 eggs
2 cups milk
1 tsp salt
1 tsp dry mustard
6 slices gluten-free bread, broken into chunks
1 1/2 cups shredded sharp cheddar cheese

Directions

Prepare this the night before!

Grease 9×13 inch baking dish and set aside.

Brown sausage then transfer to a bowl lined with paper towels to cool.

In a large bowl, beat eggs and milk together. Add the salt and mustard then beat well to combine. Add the GF bread to the mixture and soak until softened. Stir in cheese and cooled sausage.

Pour batter into greased baking dish, cover with plastic wrap and set in fridge overnight.

The next morning, preheat oven to 350 degrees. Bake the dish for 40-45 minutes. Serve warm!

Honeymoon Dreams

This is not my first post about my future honeymoon and this certainly isn’t the last. Can you blame me? The winters in Kansas City last a littttle too long for comfort so I gotta dream of beaches and piña coladas to get me through them! We had a deliciously warm (uh…relatively warm) weekend and it was amazing. It gave me a taste of what’s to come! Bring on the swim suits and sunnies!

P.S.- I mentioned it here but the honeymoon is a complete surprise! Tad booked it in an unknown location with plans of me finding out on our flight there! The only clues are that I’ll need to bring beach wear and a passport. He only has to keep it a secret for just 4.5 more months… Let’s see if he can do it!
