Tad and I enjoyed a mug of this delicious drink last Sunday night (St. Pat’s day). It was a cold and rainy night in KC so we decided to stay indoors and be cozy (I prefer that kind of night over anything). It wasn’t your typical green St. Patrick’s day drink but it was delicious nonetheless!

Focaccia Bread 1

I’ll keep this short and sweet today. I know everyone’s mind is full of weekend plans (sunshine? high of 76 in KC tomorrow? St. Patty’s day?) so I won’t bother you with my ramblings.

Okay so I’ll bother you for just a bit.

This bread is so so yummy and delicious. Tad is NOT a bread person (can you imagine??) and he loved this bread… so you know it’s good. The thing is, this bread isn’t very bread-y. It’s a no-gluten, no-grain recipe so it’s definitely a little different than the focaccia bread you’re used to. I’d say this is more omelette-y than bread-y (are you loving these made-up adjectives as much as I am?). It’s very light-weight and the consistency is a cross between an omelet and pizza crust.

Ok…so it again warrants the statement that I am NOT the cook in this sister duo. However, I am all for easy recipes that take t minus 2 minutes. I did this in between makeup and hair over the holidays 🙂

All you need to do is heat the oven to 350 degrees, slice 1 baguette and lay the slices on an ungreased baking sheet in a single layer. Sprinkle both sides of the bread with olive oil, then top one side with your favorite Italian ingredients!

I chose to top mine with some premade Trader Joe’s pesto (the best store on the planet) and sun dried tomatoes. I baked the slices for 10 minutes or until the bread crisped up.

I then added fresh mozzarella and baked for another 5 or so minutes until the cheese was melted. For an added bonus, once it comes out of the oven top it with some balsamic vinaigrette and enjoy!

Seriously easy and perfect for an on the fly appetizer!
