Good morning! While it has already been a very long week, I feel healed and replenished from my solo weekend. I really do love my husband, friends, and family, but I cannot express the pure joy that is having the house and the weekend hours to myself. Here are a few snapshots of my fabby weekend!

Matt and I both took the day off Friday so we grabbed a quick Cuban breakfast before he hit the road that was seriously delicious. Reminded us of the food we had on our honeymoon in Puerto Rico!!

I was so giddy about my day of errands and shopping on Saturday that I could hardly sleep the night before. It’s the little things in life!

I must admit, I’ve always been a fan of the color mint. It’s such a pleasant color, isn’t it? I’ve been seeing quite a bit of it lately and am definitely okay with that!

It was 70 degrees in KC yesterday and will be 76 today… Spring is making its way in! Mint is such a Spring color so I think I’ll need to get one of each of these items in this fabulous color!

How amazing are those printed pants?  I’m all about a printed pant! I think these might have to be a must-have item for the coming months!

Oh happy day! I have the day off and the hubby is going on a guy’s weekend. Starting today. I have the whole weekend to myself. I love ‘me’ time and I just don’t get enough of it. I will be soaking up every minute. First things first….shopping! Some essentials are in order!

1. Frills Hair Bands. Practical and sassy.

2. PEI-Design Notepad. Gotta have a plan! But, mostly I just love notepads.

3. Yellow Pen. Safe to say I am obsessed with these pens! So many great colors!

Hi friends! So sorry for the radio silence this week! March is living up to what we thought it would be… busy!

I’ve started the month working 24 ER shifts so my days are a little off. I can’t believe it’s already Thursday! That means a little over 2 weeks until I find out where I matched for residency! Holy anxiety!

Here are some little details from February!

Met KC’s most famous weatherman at brunch one morning. We’re practically best friends now. True story. He bought our drinks! See? Best friends.

I was totally that goob in the restaurant that not so discretely announced to the table that a famous person was sitting across the room. He definitely noticed when a table of five all turned to look at him at once. Oh well… we got free mimosas and I made a new best friend. Win win.

Some of our dearest friends came into town with their new little one and it was such a fun time seeing them. Their babe is the cutest! We started the weekend with dinner and drinks at a fabulous little restaurant in KC, Westport Cafe and Bar. The atmosphere was terribly chic and the food was delicious!

Our wedding invites came in the mail! Can’t wait to send these beauties out!

Can’t end a post without Wilson. Our sweet Wilson. Our sweet Wilson who chewed half his tennis ball and now wears it as a nose. I think we’ll keep him.

Beer Cheese Soup

Good morning!! Hope you all had a great weekend and caught a bit of the Oscars! So much glamour.

Today, I thought I’d share a soup that Matt and I have a made a few times and each time we change it up a bit and it just keeps getting better and better!! Matt found this in a beer brewing manual! Yep, that’s right, the Johnson’s are brewing! First batch is already in the works!

Beer Cheese Soup

ingredients
1/2 cup onion, chopped
1/2 cup celery, chopped
2 cloves minced garlic
1 tsp hot pepper sauce (we used Siracha)
1/8 tsp cayenne pepper
1/2 tsp salt
1/2 tsp black pepper
2 cups chicken broth
8 ounces pale ale beer
1/3 cup butter
1/3 cup flour
4 cups milk or half and half (we used vitamin D)
1 Tbsp Dijon mustard
3 tsp Worcestershire sauce
2 tsp dry mustard
1 cup shredded smoked cheddar (we used significantly more)

process
1. In a large sauce pan over low heat, stir together chopped onion, celery, and garlic.

2. Stir in hot pepper sauce, cayenne, salt, and black pepper.

3. Mix in chicken broth and beer, simmer for 15 minutes.

4. In separate pan, melt hitter over low heat, add flour and cook until golden brown.

5. Slowly whisk in milk until thickened.

6. Combine and stir beer mixture into milk mixture. The original recipe doesn’t call for any cheese to be added to the actual soup which doesn’t make any sense. So we added about two cups of whatever cheese we had in the fridge until melted. Add Worcestershire sauce, Dijon mustard, and dry mustard. Bring to a boil and cook for 15 minutes. *

7. Ladle to serve and top with cheese!

*we also added some cooked bacon, leftover pork sausage and some potatoes that needed to be eaten! This is a great empty the fridge meal!
